Our Blanc de Noir is a sparkling wine made exclusively from our Pinot Noir grapes. The sparkling wine is produced using Methode Champenoise to produce a Brut Nature champagne style wine.

A blend of Pinot Noir:Chardonnay 40:60 fermented and aged in-bottle for a minimum of 3 years before disgorgement. The finished sparkling wine has a residual sugar dosage of less than 2% producing an extra sec wine balancing the bright acidity of the wine.

We begin with a primary fermentation on the skins for 30 days. After pressing we bottle with addition yeast for a secondary fermentation and aging process that takes 4 years. During this time the wine’s carbonation is formed and the aging imparts a richness to the mouthfeel and pallate. Disgorged after aging and finished Brut Nature.

Siegerrebe is a German varietal that has similarity to Gewurztraminer. Early ripening lends itself to be a signature grape of the cool, maritime climate of Puget Sound AVA. We've developed our own style of Siegerrebe by fermenting it on the skins. The extended skin contact results is a dry wine with a golden hue and a complex nose of rose that evolves into lychee and pear.

We produce our pinot noir as a field blend of 7 distinct Pinot Noir cultivars. Blending diverse Pinot cultivars adds depth, complexity and variability to each vintage’s wine. We ferment our Pinot slowly, starting the fermentation with native yeast, and make good use of the cool autumn weather in Puget Sound to carry out an extended maceration.

Raised on 50% new french oak and 50% neutral vats our 2014 Chardonnay underwent a slow primary fermentation and even slower malolactic fermentation. This slow evolution revealed a nose of beeswax and date. The entrance has a precise acidity that softens on the mid-palate into subtle notes of ripe dessert apple. 6 cases produced.
